Why aren't we attracted to blue food?

In fact, blue or purple food generates some rejection, including jelly beans, candies, and drinks and spirits that are artificially colored with this hue. Whites and greens, however, do usually work well, which takes into account the food industry when selecting dyes. Experts suggest that one of the reasons for rejection of blue is that in natural foods they can be indicators that a food, for example meat, is in poor condition, toxic or has fungi, implying that it will not suit us.

Moreover, a recent study published in the Journal of Consumer Research revealed that food color influences food taste perception. In experiments in which the sweetness of an orange juice was maintained but its color altered, the researchers observed that the more intense the sweeter orange color the subjects perceived its flavor.
