Almond flour is made by grinding sweet almonds. It is usually made with peeled almond (skinless) or whole almond. It is more like cornmeal than wheat flour. It is used in pastries and confectionery since ancient times: to make almond marzipan and other sweet pastries, to fill cakes.
Almond flour has recently gained importance in recipes for celiacs, people who remove cereals from their diet, or those who adopt a low-carbohydrate diet.
