Shredded coconut laminated by San Blas in a single 1Kg format. Dehydrated coconut meat is used to make flours and sweets. Fruit juice (coconut water) is drunk naturally. It also serves as a base for making alcohols, vinegars, sweets, ice cream and soft drinks. This pulp disintegrates or grates and dries at a temperature between 60 or 75 oC, reaching a moisture content of less than 2.5%. The percentage of lipids should be 50 to 65% and the free fatty acid content should be less than 0.01%.
