Castilian lentils are dried legumes belonging to the species "Lens culinaris". The Castilian lentil is the largest of all lentils, has a size between 7 and 9 millimeters and these are green lentils of light tone with some darker grains, which are called "vinegared lentils". Its grain is wide, rounded, crushed and lens-shaped. These dry legumes have very fine skin and stand out for their tenderness and soft taste. The Castilian lentil has excellent cochura in any type of water.

The color of the Castilian lentil darkens over time, a product of oxidation when exposed to light.

Castilian lentils have a high nutrient content, also highlighting in these legumes their high content of protein, carbohydrates, calories and fiber.

The Castilian lentil also contains:

  • Vitamins A, B1, B2, B3, B6, C, and E.
  • Minerals: Potassium, Phosphorus, Calcium, Iron, Zinc, Selenium, Magnesium, Copper, Manganese, Sodium.
