The pardine lentil is a small lentil, between 3 and 5 millimeters. The color of its skin is earth brown or reddish brown and that of its albumen is yellow. This dried legume is rich in carbohydrates, iron and magnesium. The pardine lentil can also be called Pardiña lentil, brown lentil, French lentil or Francesilla lentil. The brown lentils are especially suitable in salads, to combine with pastas and for Dishes of Mediterranean cuisine.
The brown lentil is whole and does not undo or release the skin once cooked.
Although not entirely recommended, brown lentils allow to boil without the need for soaking hydration.
