Shredded coconut packaged by Borges in bag formats of 200grs. Dehydrated coconut meat is used to make flours and sweets. Fruit juice (coconut water) is drunk naturally. It also serves as a base for making alcohols, vinegars, sweets, ice cream and soft drinks. This pulp disintegrates or grates and dries at a temperature between 60 or 75 oC, reaching a moisture content of less than 2.5%. The percentage of lipids should be 50 to 65% and the free fatty acid content should be less than 0.01%.
